Spaghetti Last Minute

Last night I was craving pasta. My lovely wife prepared a wonderful roasted chicken and a "italian" version of Insalata di Cesare (caesar salad - will post this sometimes as it's delicious!!!), but I was craving pasta and didn't care at all about meat What to do that it's easy and fast? My first idea was Spaghetti Aglio e Olio e Peperoncino, which is fast and delicious (you can find the package with the essential herbs for this recipe in our Casa Toscana stores), but when I was opening the pantry to grab Olive Oil and the herbs, my eyes caught the sundries tomatoes paste.....well, I thought, maybe a couple of spoons of this in my sauce will just make it tastier....would be even better if I had a few olives, and next thing I did was opening the fridge and look for black olives, which I found (every italian fridge or pantry has always olives in) . While I was closing the refrigerator door I saw a half jar of capers "looking at me" ..... if they could speak they would have said "what about us"? Yes, you guys suite perfectly.... well, dear friends, let me tell you that this was one of the best pasta sauce I ever made. Easy, quick and delicious! Here are some tips.

For 4 people:

  • 400 gr. spaghetti 
  • 1/2 garlic head
  • 1 coffee spoon of dry hot peppers
  • 5 spoons EVOO
  • 2 spoons sun dried tomatoes paste
  • 150 gr black olives pitted
  • 50 gr. capers.

Chop the garlic and stir in a pan with the EVOO and the hot pepper, being very careful not to burn it...add the sun dried tomato pate', the olives (previously chopped) and the capers. Cook for a few minutes (3/5) and pour the cooked pasta (al dente) in the sauce....mix, shave a nice Parmigiano Reggiano 3 years aged and serve. BUON APPETITO!!!!
